Rocky Road Passover Brownies!

For those of you who think you are limited to whatever boxed mixes you can find at your local grocery…give THIS recipe a try. (Pix are to be found on my Twitter, as well!)

Yield: 8 servings


1/2 cup margarine, softened

1/2 cup brown sugar

1/2 cup granulated sugar

6 eggs

3 tablespoons brewed coffee

1/2 cup cake meal

1/2 teaspoon salt

1/4 teaspoon cinnamon

1 pound semi-sweet chocolate chips, melted

1/2 cup shredded coconut


1/2 cup mini marshmallows

1/2 cup semi-sweet chocolate chips

1/2 cup chopped nuts

1/2 cup finely shredded coconut


1. Preheat oven to 350 degrees.

2. Cream margarine in a bowl with an electric mixer on medium-high speed.Reduce speed to medium and gradually add both sugars. Scrape down sides of bowl. Beat in eggs, one at a time. Beat until well combined.

3. Slowly mix in coffee, cake meal, salt, and cinnamon. Stir in melted chocolate by hand.

4. Lightly grease a 9-inch square baking pan. Dust pan lightly with ground nuts. Pour chocolate batter into prepared pan.

5. Bake 20 minutes. Sprinkle toppings evenly over brownies. Bake 10 minutes longer; do not overbake. Cool completely. Use a knife dipped into hot water to cut brownies.

So so yum!!!

    Wow…those look great! I’m not Jewish and so don’t observe Passover but those look like they’re worth a try!
